做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入(rù )生(shēng )姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
