做法:春笋(sǔn )切成片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清(qīng )水半(bàn )掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
