做(zuò )法:洗净(jìng )宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈(chén )皮泡(pào )软,拍裂一(yī )小块姜,热锅,用(yòng )姜(jiāng )块在锅(guō )上擦一(yī )遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。
