做法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂(liè )一小块姜,热(rè )锅(guō ),用(yòng )姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待(dài )油六成热下鱼,煎至微黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝。
