做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热(rè )锅,用姜(jiāng )块在锅上擦一(yī )遍,放两(liǎng )勺(sháo )油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲(bāo )里的清(qīng )水,放入煎煮好(hǎo )的鲫鱼和其他(tā )材料,武火(huǒ )煮沸,转中小火煲一(yī )个半小时,下盐调味即可品尝。
