做法:春笋切成(chéng )片后(hòu )加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
