做法:春笋切(qiē )成片(piàn )后加少许(xǔ )盐捞出(chū )后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
