做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块姜,热锅,用(yòng )姜(jiāng )块在锅上擦一遍,放(fàng )两(liǎng )勺(sháo )油,待油六成热(rè )下鱼(yú ),煎至微黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半小(xiǎo )时,下盐调味即可品尝。
