做法(fǎ ):洗净(jìng )宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼(yú ),煎至(zhì )微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的(de )鲫鱼和其(qí )他材(cái )料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个(gè )半小时,下盐调味即可品尝。
