做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
