做法:洗净宰好鲫鱼,洗(xǐ )净淮山(shān )和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放入煎(jiān )煮(zhǔ )好的鲫(jì )鱼(yú )和(hé )其他材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可(kě )品尝。
