做(zuò )法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂(liè )一小(xiǎo )块姜(jiāng ),热(rè )锅,用(yòng )姜块在锅上擦一(yī )遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转中(zhōng )小(xiǎo )火煲一个半小(xiǎo )时,下盐调(diào )味即(jí )可品尝(cháng )。
