做法:洗净宰好(hǎo )鲫鱼,洗净(jìng )淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮(zhǔ )沸,转中小火煲一(yī )个半小(xiǎo )时(shí ),下盐调味即(jí )可品尝。
