做法:春笋切(qiē )成片后加少许盐(yán )捞出(chū )后用(yòng )清水浸(jìn )泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
