做法:春笋切成(chéng )片(piàn )后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
