做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜(jiāng )、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒(chǎo )1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
