做(zuò )法:春笋切成片后加少许盐(yán )捞(lāo )出后用清(qīng )水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
