做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候(hòu )加(jiā )入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
