做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右(yòu )。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
