做法:洗净宰好鲫(jì )鱼,洗(xǐ )净淮山(shān )和薏米。用(yòng )清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在(zài )锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫鱼(yú )和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调味即(jí )可品尝。
