做法:洗净宰好鲫鱼,洗净淮山(shān )和薏(yì )米(mǐ )。用清水把(bǎ )陈皮泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦煲里(lǐ )的清水,放(fàng )入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味(wèi )即可品尝。
