做法:洗净宰好(hǎo )鲫鱼,洗净(jìng )淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅(guō ),用(yòng )姜(jiāng )块在锅上擦一(yī )遍,放两勺(sháo )油,待油六成热下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮(zhǔ )沸,转中小火煲一个半小时(shí ),下盐(yán )调(diào )味即可品尝。
