做法:洗净宰好(hǎo )鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅(guō ),用姜块(kuài )在(zài )锅上擦一遍,放两勺(sháo )油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮(zhǔ )沸,转中(zhōng )小火煲一个半小(xiǎo )时(shí ),下盐调味即可品尝(cháng )。
