做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
