做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅(guō ),用姜块(kuài )在锅(guō )上擦一遍,放(fàng )两(liǎng )勺油,待油六成(chéng )热下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他(tā )材料,武火煮沸,转中小(xiǎo )火煲(bāo )一个半小时,下盐调味即可品尝。
