做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水(shuǐ )把陈皮(pí )泡软,拍(pāi )裂一小块姜,热锅,用姜(jiāng )块在锅上擦一(yī )遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和(hé )其他(tā )材(cái )料(liào ),武火(huǒ )煮沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品尝。
