做法:春(chūn )笋切(qiē )成(chéng )片后加少许盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖(mèn )。
