做法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
