做法:洗(xǐ )净(jìng )宰好(hǎo )鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六(liù )成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可(kě )品尝。
