做法:春笋切成片后加少许盐捞出后(hòu )用(yòng )清水(shuǐ )浸泡(pào ),生(shēng )姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅(guō )盖焖。
