做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快(kuài )熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖(mèn )。
