做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖(gài )焖。
