做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火(huǒ )。煮(zhǔ )到水快熬干的时候(hòu )加入盐(yán ),翻炒均(jun1 )匀(yún )稍收汁(zhī )时盖上锅盖焖。
