做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁(zhī )时盖上锅盖焖。
