做(zuò )法:洗净(jìng )宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏米。用(yòng )清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅(guō )上(shàng )擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入(rù )煎煮好(hǎo )的(de )鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝。
