做法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加(jiā )入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖。
