做法:洗净(jìng )宰好鲫鱼,洗净(jìng )淮山和薏米。用清(qīng )水把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺油(yóu ),待油六成(chéng )热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里(lǐ )的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
