做法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮开(kāi )后(hòu )转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
