做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水把(bǎ )陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅,用姜(jiāng )块(kuài )在锅上擦一遍,放(fàng )两勺(sháo )油,待油六成热(rè )下鱼(yú ),煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼(yú )和其他材料,武(wǔ )火煮沸,转中(zhōng )小火煲一个(gè )半小时,下盐调味即可品尝。
