做(zuò )法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左(zuǒ )右(yòu )。再加(jiā )入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
