做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把(bǎ )陈(chén )皮泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅(guō ),用姜(jiāng )块在锅上擦(cā )一遍(biàn ),放(fàng )两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中(zhōng )小火(huǒ )煲一(yī )个半小时,下盐调味即可品尝。
