做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用清水把陈皮泡(pào )软,拍裂一小块姜,热(rè )锅,用姜块在锅上擦一(yī )遍,放两(liǎng )勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一(yī )个(gè )半小时,下(xià )盐调味即(jí )可品尝。
