做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜切(qiē )片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的(de )时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
