做法:春笋切(qiē )成(chéng )片(piàn )后加少许盐(yán )捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
