做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油(yóu )六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好(hǎo )的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火(huǒ )煲(bāo )一个半(bàn )小时,下盐调(diào )味即可品尝。
