做法:洗净(jìng )宰好鲫(jì )鱼,洗净(jìng )淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅(guō )上擦一(yī )遍(biàn ),放(fàng )两勺(sháo )油(yóu ),待油六成(chéng )热(rè )下鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
