做法:洗(xǐ )净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏米。用清(qīng )水把陈皮(pí )泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入(rù )煎煮好的鲫(jì )鱼和其他材料(liào ),武火煮沸,转中小火煲一个半小时,下盐调味即(jí )可品尝。
