做(zuò )法(fǎ ):洗净宰好鲫(jì )鱼,洗净(jìng )淮山和薏米。用(yòng )清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成(chéng )热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其他(tā )材料,武火(huǒ )煮沸,转中小火煲一个半小(xiǎo )时,下盐(yán )调味即可品尝。
