做(zuò )法:春笋切成片(piàn )后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大火(huǒ )煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
