做法:春笋(sǔn )切成(chéng )片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
